I always struggle with finding something for breakfast when I’m in a rush, that isn’t a granola bar. As a type one diabetic, having a bowl of cereal can really mess up my blood sugars for the day, so I typically like to stick to eating lower carb foods in the morning as I feel a lot better. My favourite thing to make that I can freeze, is mini quiche! I have been making this for two years. I usually make one batch a week, and then freeze it. It’s super simple, quick in the mornings and filling. I typically put in whatever I have left over in the fridge.  This week I threw in broccoli and some cheese I had. I purchased the eggs, cream, and ham which came to about $7. I eyeball this entire recipe as its fairly straight forward. This made for 11 mini quiche. (I saved 3/12 eggs)
